Traditional Indian Chai
500ml Water
4 Cloves
2 pinches Nutmeg, ground
1/4 tsp Cinnamon, ground
1/4 tsp Cardamom, ground
1/2 inch piece of Fresh ginger, chopped fine
1 tsp Black tea or 2 teabags
500ml Organic Milk
2 tsp Sugar or coconut sugar

Cooking Instructions
Bring the water to boil in a medium size pan with a pouring lip - add the spices and boil for 2 minutes
Next, add the tea and simmer for a further 2 minutes
Pour in the the milk and bring to a medium high heat (be careful it doesn't boil over!)
Cook until it has reduced by half or 1/3 if you prefer it stronger
Once done, strain into your cup and add sweetener
We recommend varying the quantity of milk and sugar according to dosha. Excess milk and sugar will increase kapha dosha.
Feel free to add Roobus Tea if yu do not which to have caffiene though, using cardamom reduces some of the draining and drying effects of caffeinated tea.
