Faith's Creamy Vegan Chai
250ml Oat milk (we like Oatly)
150ml Soy Milk (we prefer Alpro for this, it doesn't boil over as easily)
400ml water
2 Rooibos tea bags/2 tsp leaves. Or, if you want caffeine, normal tea is fine
1/4 tsp Ginger, ground
1/4tsp Cinnamon, ground
1/4 tsp cardamom
2 cloves crumbled
1/5 tsp nutmeg
Coconut blossom sugar or date syrup

Who said chai can't be vegan? Get your spicy tea fix with our new vegan recipe! Combining warming spices, caffeine-free tea and a lush mix of soy and oat milks this tea is the perfect way to start the day or, as its caffeine free, maybe end it!

Cooking Instructions
Choose a medium sized pan (ideally with a measurements in millilitres etched inside)
Shake your soy and oat milk to mix evenly and measure using a measuring jug
Add the soy milk, oat milk and water to a pan
Add the tea bags or loose tea (unless using black tea, add this after 15 minutes or it will be very dark and bitter)
Add the spices into the pan and whisk until they are all mixed well with the milk and water
Put the pan on a medium heat and heat the mixture until it boils, watching carefully to see if you need to adjust the temperature. You want it to be cooking on a low (not too slow) bubble without it boiling over
Leave to cook for 20-30 minutes (depending on heat) or until it has reduced by half to 390ml (give or take)
If you like a fluffy head on top, whisk for 2 minutes, soy milk gets nice and bubbly!
Add you preferred sweetener (we just love coconut sugar!!)
Sprinkle with cinnamon, curl up and enjoy :)
