Creamy and Fragrant Rice Porridge
100g Basmati Rice
200ml water
2 pinch Black Pepper
Handful Coriander
1 clove Garlic
1 tbsp Ghee (or sesame oil)
1/2 inch Fresh Ginger
1/4 tsp Rock or Pink Salt

In Ayurveda, rice is considered a nectar. It's simple, sweet, nourishing yet easy to digest! This is such a simple and delicious meal (or snack) that can be eaten on its own or with a side at any time of day. As it's such a speedy meal, we highly recommend enjoying for breakfast as an alternative to porridge!
Also, this is great to eat if you are sick or have a fever and are just getting your appetite back. It's so easy to make and digest and the garlic, ginger and coriander all boost your immune system, increase digestive enzymes and help to reduce pain, body aches and fevers.
Being a sweet and grounding food, rice reduces Vata and Pitta but can increase kapha. By adding pungent spices and bitter herbs this reduces the heaviness of the sweet taste, increases Agni (digestive fire) and makes the dish kapha increasing. If you are kapha dominant make sure to add a little extra spice or mix it up by trying the dish with Barley or Quinoa instead (which are hotter and lighter).

Cooking Instructions
Soak the rice overnight (or at least1 hour before if possible)
Rinse the rice and add to a pan with the water
Bring to the boil and simmer for 15 minutes
While the rice is cooking, fry the garlic, ginger and black pepper in the ghee
Once lightly browned add to the rice to for the remaining 10 minutes
1 minute before serving add the coriander and, if you would like it even creamier, add a little milk or your choice
Salt to taste (more for vata, less for kapha and pitta types), serve and enjoy!
